Chicken Taco Rice Salad

A favorite toss-together southwestern style chef salad with simple ingredients and big flavor.

Makes 6 (2-cup) servings

1 (5-ounce) package yellow rice

6 cups mixed salad greens

2 cups skinless rotisserie chicken, shredded

1 (15-ounce) can black beans, rinsed and drained

1 cup grape or cherry tomato halves

1/2 cup chopped red onion

1/2 cup shredded, reduced-fat, sharp Cheddar cheese

Salsa Vinaigrette, (recipe follows)

1. Prepare rice according to package directions.  Cool; set aside.
2. In large bowl, combine cooled rice and all ingredients and toss with Salsa Vinaigrette (see recipe).

Salsa Vinaigrette

Salsa with a few ingredients magically makes great-tasting vinaigrette. Use whatever needed and save remainder for another time.

Makes 1 1/2 cups

1 cup salsa

2 teaspoons chili powder

1/2 teaspoon ground cumin

1 tablespoon lime juice

2 tablespoons olive oil

1.  In small bowl, whisk together all ingredients.

Guacamame

Combination of avocado and edamame makes this incredibly delicious and nutritious dip.  Serve with fresh veggies or chips.

Makes 10 (1/4-cup) servings

1 large avocado, (about 2/3 cup mashed)

1 1/2 cups shelled edamame, thawed

2 tablespoons lime juice

1/2 teaspoon minced garlic

1/2 cup salsa

3 tablespoons nonfat plain Greek yogurt

Salt and pepper to taste

1. In food processor, combine all ingredients, mixing until smooth.

Terrific Tip:  Can also use to stuff vegetables or as a sandwich spread.

Nutrition Nugget: Soybeans are high in omega 3 fatty acids, which are necessary to ingest through food for their anti-inflammatory benefits.
