How to Jazz-Up Your Kale Salad

Kale has a variety of health benefits. One cup of kale has only 36 calories, five grams of fiber and fat-free, but does include significant quantities of essential fatty acids that are good for you.

However, kale can taste very bland without jazzing it up a bit. This recipe will give your taste buds the salt, crunch and flavors that make kale easy to incorporate into your daily diet.  

 

Turkey bacon - chopped, a lemon and kale

Ingredients:
4 cups of kale (chopped and rib removed)

5 slices of turkey bacon (chopped)

1 scallion (diced)

1/2 tsp. garlic (or more if you are not planning on attending a social event)

1/4 cup pine nuts

1 tbsp. olive oil

1 tbsp. grated parmesan

1 tbsp. lemon juice

  • Heat olive oil on medium, add scallions, garlic and turkey bacon. Cook until turkey bacon is crisp to your liking (my husband says the crispier the better!).
  • Add kale and lemon juice, toss many times so it soaks up all the yummy flavors (usually about 4-5 min).
  • Remove from heat and toss with pine nuts and parmesan.

 

Voila! Another spin on how healthy doesn’t have to be tasteless. (For those of you that have husbands that believe salad is not a sufficient meal, feel free to add a side protein of your choice).
